PaUL’S was established in 2019.
The owner, Jillian, bought the space in mid June 2019. Never having owned a bar before but had worked in the industry for over 20 years. With Bed-Stuy changing dramatically the past few years, she tried to bring it back to it’s roots. Naming it after a picture from a tax record archive from the 1940. She has kept everything fresh, affordable and local. Most of the herbs she uses for her food and cocktail list can be seen hanging in the window. Produce from her family’s farm, fish from a block away and chocolates from a local Chocolatier. In addition, she is partnered with a local fundraiser through service for the underserved which she donates a percentage of proceeds twice a month.
